Watermelon Cucumber Salad with Honey Lime Dressing
Honey can be substituted for sugar in many recipes, but recipes with honey as a featured ingredient are so much tastier. The National Honey Board has a wonderful website (honey.com) with loads of suggestions. This one popped out as seasonal and versatile, and just inexplicably better than if the sweetener were sugar.
Ingredients
Dressing
- 2 T extra virgin olive oil
- 1 tsp lime zest
- 2 T honey
- 4 T lime juice
- ½ tsp kosher salt
Salad
- 4 cups watermelon, cubed
- 1 cucumber, sliced and quartered
- 1/3 cup fresh mint, thinly sliced
- ½ cup feta, crumbled
- Sea salt, to taste
Directions
- Whisk together the dressing ingredients, then drizzle over the watermelon and cucumbers, top with crumbled feta.
Variations
- Hot honey has been on the radar for a couple of years now. To make a quick version at home, start with 1 T red pepper flakes in 1 cup of honey, heat for a few minutes, then strain (or don’t!) the pepper flakes out. If you use fresh hot peppers, be sure to refrigerate the leftover honey. Here, the recipe takes a sweet and spicy turn by substituting hot honey, adding 1 ½ cup of sliced fresh strawberries and 1 tablespoon of chopped jalapenos to the salad.
